Wish you could eat something like this every day of the week, not just on the weekends?
You can! All you have to do, is make a double or triple batch on the weekend, and freeze these babies! Then, on Monday morning when you're all sad that you have to go back to work, you'll suddenly remember, "Oh, I have sweet potato waffles that won't make me feel sluggish, in the freezer!" And everything will just keep on getting better from there.
Feeling a little sluggish and slow this winter? You might be eating too much cooked food. Cooking food destroys its enzymes, which helps with digestion, so our bodies have to work extra hard to digest it. It's all ok, for the most part, unless you are eating too much cooked food. Raw food (alive), makes you feel and be more - alive! Simple.
A good goal to have, is to try to make half of the food you eat raw. So see this picture of the sweet potato waffle? Cut in in half, and then add more avocado. :)
When I used to eat a blah bowl of cereal in the morning, and cup of coffee, I did NOT want to get my butt out of bed. And then it occurred to me - duh! It's pretty much just sugar, air, chemicals, and a drug. No wonder it doesn't make me feel awesome.
But waffles, avocado, and an egg? Yes. These beauties don't contain any brain fogging gluten. Instead, they contain energizing garbanzo beans, mood elevating sweet potatoes, lots of good, brain boosting fat, and raw-some awesomeness.
So here's what we need to do. Go the store and buy all these ingredients. Make a big batch of waffles, and freeze them.
No more cereal in the morning, mmk? (seriously)
2.5 c. - garbanzo, millet, or oat flour
2 T. - baking powder
1 t. - baking soda
1 t. - sea salt
1/2 t. - ground ginger
4 - local/organic eggs
2 T. - maple syrup
1/4 c. - coconut oil
1 can - coconut milk
1.5 c. - grated sweet potatoes
4 - local/organic eggs
2 - avocados
1 T. - olive oil
1/2 t. - coarse sea salt
- In a large bowl, combine first 5 ingredients.
- In a separate bowl, whisk together eggs and maple syrup. Add in to the dry ingredients.
- Melt the coconut oil, and add to the bowl along with the coconut milk and grated sweet potatoes. Stir to combine.
- Pour in your waffle maker to cook! Or make into pancakes.
- Top your waffle with lots of sliced or mashed avocado, an egg over easy, a drizzle of olive oil and a pinch of sea salt.
