Carrot apple juice is staple in nearly every juice bar around the country, we're kicking it up a notch and giving a nod to the season with a hint of ginger! Ginger balances this drink perfectly adding a bit of spice and sass to a sweet, tangy base that is idea for any time of the day.
Ginger has been used for centuries to cure digestive issues like bloating, gas and nausea (did anyone else get served warm Vernors when they were a child with an upset stomach?).
This is definitely a good reason to use your juicer over your blender, unless you have an amazing blender - otherwise you will have a lot of pulp. If you do go down the blender route be sure to strain the juice first. You can use the pulp in zucchini bread or even your morning oats so do not throw that away!
- 4 carrots
- 2 Fuji or Honeycrisp apples
- 1/2-inch piece of fresh ginger, peeled (use more if you love ginger)
- Put everything into a juicer and enjoy!
- If using a blender, core your apple first and then puree everything as much as you can, straining the pulp to desired consistency before serving.
