Thanksgiving is the most anticipated meal of the year, chocked full of herbaceous goodness, family memories and awkward conversations.

1. Mustard Green Goddess Salad
One bite of a raw leaf and you know that it came from a mustard green plant, less bitter than kale and almost as peppery as arugula this leafy green is often overlooked. The natural mustard-like flavor pairs perfectly with the earthy lentils and sweet squash.
2. Pumpkin Goat Cheese Pasta.
Don't lie, we had you at "Goat Cheese." Roasted pumpkin is packed with nutrients and will leave you feeling full for hours while the creamy goat cheese tops it off with a cozy tang.
3. Brussels Sprouts Salad
A fun twist on the traditional Thanksgiving side, this version takes crispy toasted Brussels sprouts tossed in a slurry of rosemary and red pepper flakes on a bed of nutty soba noodles. This is also a great way to use up left over Turkey for days after Thanksgiving.
4. Green Bean Casserole
Thanks to the help of one of our rockstar subscribers, Renee, we transformed the classic green bean casserole into a healthy Voeden treat. Coconut milk replaces the gravy and homemade crispy onions make for the perfect topping.
