We've been on-the-go a lot lately; road trips, plane trips, longer day trips, you name it. Spring comes, and we start leaving our house again!
While I've gotten real used to - and fond of - eating most meals at home (a luxury!), it feels good to be on-the-go and out of the house more. But, I just cannot be caught out somewhere without something good to eat! Especially with Ruby in tow. And, I can't bear the thought of Mark on a plane (lots of work trips coming up), without something real to eat.
My favorite solution? Veggie bags! (Or jars, depending on what kind of trip/errand you are embarking on.)
It's so simple. You just cut up a bunch of veggies, mix with lemon juice and fresh herbs (this is the key for great, fresh taste!), and throw them in a bag or jar (bags are better for air travel).
Our favorite veggies are carrots, celery, snap peas, red pepper, and lots of radishes. Radishes are cooling, hydrating, help eliminate toxins, and even soothe dry, sore throats, making it the perfect air travel snack.
If I am making a bunch of bags/jars at once, I'll throw the veggies in a bowl first, mix with lemon juice, herbs, and a pinch of black pepper (YUMMO), then divide up into jars.
Then, before we walk out the door, we grab a bag. Such an easy and delicious way to make sure you get energizing, hydrating veggies in your body each day, no matter where life takes you.
Kids love it too - so colorful and fun!
