Spring used to be a season of unexplained anxiety for me. Like I was being pulled out of my cave before I was ready; a little startled, tired, and blinded, as if someone turned the bedroom light on when I was dead asleep in my dark, cozy, room.
I wasn't ready for the change. (I know how crazy that sounds - who wants to stay in winter?!)
But now that I understand the seasons, and what my body needs to transition, I feel hopeful anticipation when spring comes around.
Since changing to a seasonal focused diet, every season brings a taste and flavor that I am familiar with, and that my body now craves. Spring flavors are earthy, strong, and cleansing with veggies like asparagus, spicy arugula, leeks, and mushrooms.
It's no coincidence that the veggies available in spring are exactly what our bodies need, and right now we need these strong, cleansing flavors to wake us up, clean out the winter cob webs, and re-energize our bodies for the longer daylight hours.
So what's in season in the spring? Here is a brief list, as well as a preview of how we use these veggies in our spring recipes. We have a delicious spring spread prepared!
