Need a salad that will last for days?
Sometimes I wish that I could just walk into my kitchen and find a delicious, juicy, satisfying salad waiting for me.
Tada! Cabbage slaw.
Make this at the beginning of the week, and it will last for days. I've been greeted by this salad every time I walk in to my kitchen this week and I couldn't be happier about it.
Cabbage, has major cancer prevention power and is a part of the crusiferous family. To get all of the benefits crusiferous veggies have to offer, we need to eat them 3-6 times a week, which is why having this slaw on hand is so vital
1 head - green cabbage, shredded
2 - carrots, shredded
1/2 c. - basil, minced
3/4 c. - olive oil
2/3 c. - lemon juice
1 t. - dijon mustard
2 - garlic clove, minced
1/2 t. - sea salt
1/4 t. - black pepper
- Chop/shred cabbage and place in a large bowl with shredded carrots and minced basil.
- In a mason jar, combine olive oil, lemon juice, dijon, minced garlic, sea salt, and black pepper. Seel the lid and shake to combine.
- Pour dressing over the slaw, a little at a time, and massage with your hands to combine.
- Eat it up, and store the rest in an airtight container in the fridge where it will keep for days.
